The "Ice-N-Hot" dripper deserves a bit of explanation.
There are three parts to this set:
- a 3-hole plastic 102-size Kalita dripper (similar to Melitta #2 size)
- Ice chamber (including diffuser plate)
- Server (decanter)
You can use the Ice-N-Hot two different ways. You can use just the dripper (or your own dripper) with the server as a lovely pourover set, or use the ice chamber to make ice coffee.
The unique feature about the ice chamber is that it's designed to do two things (sorry about all the lists): diffuse the hot brewed coffee before chilling, and chill the coffee through ice before dispensing into the server. A diffuser/dispersion plate that goes above the ice but under your dripper makes it possible. The other nifty little feature is that the ice chamber will accommodate a number of different pourover drippers, so you're not stuck with the one that's included.
As with everything else we're offering, the Ice-N-Hot is on our product list because we believe it makes excellent ice coffee, and our favorite method is hot-brewed-over-ice. We've got a lot of technical coffee-nerd reasons (brewing hot can produce the best-tasting brew, chilling immediately captures the most volatiles and preserves chlorogenic acid, rather than allowing it to de-esterize into the unpleasant-tasting caffeic and quinic acids), but we'll leave those in the nice tidy parentheses and just say that if done correctly, you can't beat it.
The brewing HAS to be proper. The chilling should be quick and efficient, and dispersing the brewed coffee before it hits the ice helps do that and well. The ice HAS to be clean. The coffee you're brewing HAS to be good quality, and ideally a balanced and sweet selection.
It's coming up on the tail-end of ice coffee season, but this set makes it easy enough to enjoy all year round.
